How to prepare White Wine Goat Cheese Butter

1 Cup Dry White Wine
1 lb. Unsalted Butter
1/4 lb. Goat Cheese (Soft Chevre)
2 Tbs of very thinly sliced Green Onions (Green part only)
1/4 tsp Garlic Powder
1 tsp Sea Salt (Semi Fine)
1/4 tsp White Pepper Ground (Optional)

How to prepare White Wine Goat Cheese Butter

  1. In a small sauce pot, reduce the white wine by half.
  2. Remove from heat and cool to room temperature.
  3. Whip the softened butter in a stand mixer with the paddle attachment on medium speed until double in volume, pale and fluffy. Approximately 8-10 minutes.
  4. Add cooled white wine reduction, and mix for 1 minute more.
  5. Add in the remaining ingredients and gently mix on low for 1-2 minutes more.
  6. Chill and store until ready to use.
  7. When ready to use, place a melon baller or Tablespoon under hot running water for 30 seconds to heat, and scoop butter portions.
