How to prepare Black Truffle Chive Butter

Yield: 16 Servings


1 Pound Unsalted Butter Softened
1 Tablespoon Truffle Oil
1 Ounce Black Truffle Peelings, Drained and Chopped (found in most specialty markets)
1/2 Cup Chopped Chives
1/4 teaspoon Garlic Powder
1 teaspoon Sea Salt (Semi Fine)
1 Tablespoon Fresh Squeezed Lemon Juice (About a Half a Lemon)

How to prepare Truffle Butter

  1. Whip the softened butter in a stand up mixer with the paddle attachment on medium speed until double in volume, pale and fluffy 6 approximately 8-10 minutes.
  2. Add remaining Ingredients, and mix for 1 minute more.
  3. Chill and store until ready to use.
  4. When ready to use, place a melon baller or Tablespoon under hot running water for 30 seconds to heat, and scoop butter portions.

This butter can be frozen and used for up to 3 months!
