2 cups Blue Cheese Crumbles
½ Tbsp. Worcestershire Sauce
2 tsp. Lemon Juice, freshly squeezed
¼ tsp. Black Pepper, ground
½ tsp. Kosher Salt
2 Tbsp. Fresh Chives, minced
1 Tbsp. Parsley, chopped

How to prepare the Steaks

  1. Place olive oil and Cajun Seasoning in separate shallow pans.

  4. Make sure that they are completely coated with seasoning.
  5. Place into an air-tight container and refrigerate for 24 hours.

How to prepare the Caramelized Onions

  1. Heat the clarified butter in the sauté pan over medium heat.

  3. Reduce the heat to medium low and add the sugar, stir to combine, continue to cook for 15 to 20 minutes until the onions are caramelized.
  4. Stir occasionally, so the onions do not burn.
  5. Remove the pan from the heat and add the Madeira, return the pan to the heat and reduce the liquid in half.
  6. Reserve warm until needed.

  1. Place room temperature butter into a mixing bowl.
  2. Add the blue cheese crumbles, mix to incorporate.
