How to Prepare Center-Cut Iceberg Salad

Serves 2Ingredients:1 Head of Iceberg Lettuce, about 1 1⁄2 lbs.⅓ Cup Blue Cheese Dressing2 to 3 Slices Crisp-Cooked Bacon, about 3 tbsp. Crumbled1 Hard-cooked Large Egg, about 3 tbsp. Chopped3 tbsp. Chopped Tomato3 tbsp. Crumbled Blue CheeseHow to prepare the salad:
- Remove any wilted outside leaves from the lettuce. Strike the bottom of the lettuce head on a flat surface to loosen the core, and then pull out the core.
- Slice four 2-inch-thick wedges from the center section of the head. Discard or reserve the rest for another use. Put two wedges on each of two serving plates.
- Spoon the dressing across the wedges so that it runs over one side. Sprinkle with the bacon and egg, tomato, and blue cheese, and serve immediately.
